    Can food pretend to be something it isn’t — and taste better than the original?



    In this workshop we’ll explore the kitchen of illusion, fermentation and plant-based cunning. During the meeting we will cook dishes together that deceive the senses, challenge culinary habits and show how far you can push flavor boundaries without using animal products. This is a workshop for the curious, open-minded and ready for culinary “aha!” moments. For those who want to understand why one thing tastes like something else — and how to make it themselves.



    Menu:



    • “melted cheese” from potatoes
    • “herring” from oyster mushroom
    • “pineapple” from zucchini
    • “watermelon” from cucumber
    • “bacon” from coconut chips
    • “mackerel” paste
    • “parmesan” from sunflower seeds
    • pineapple à la kimchi with gochujang paste


    The workshop is practical — we cook, taste and talk about techniques, ingredients and processes. There will be discussion of textures, umami and how nature itself suggests the most surprising solutions. This is not a workshop about substitutes. It’s a workshop about cleverness, taste and plant-based imagination.



    The workshop will be led by Kamil — an explorer of plant cuisine and culinary illusions. He creates dishes that change identity: vegetables pretend to be fruits, fungi pretend to be fish, and seeds pretend to be dairy. He works with fermentation, texture and umami flavor, showing how far plant cuisine boundaries can be pushed. He is interested in unexpected ingredients, wild plants and processes that bring out depth of flavor without using animal products. In his work he combines cooking, experiment and attentiveness to nature.
